John Scardapane envisioned the Saladworks concept during his time as a gourmet chef at a prestigious New Jersey country club. Imagining a fun restaurant that served nutritious, made-to-order food, he believed that America was ready for a restaurant revolution. Despite initial discouragement from the owners of a local mall, he opened the first Saladworks to rapid, sustained success in 1986. Offering inventive salads that satisfied the appetite and piqued the interest of the region’s consumers, Saladworks gained a large following of fans that helped propel the small enterprise into a regional sensation.
Within five years, Saladworks was featured as part of Philadelphia Magazine,’s “Best of Philly” list as it continually outpaced its competition. And when repeatedly approached about opening additional stores, John was ready to realize Saladworks’ franchising potential. By 2003, over fifty locations already served five states in the area, all with the same fanatic’ly fresh service, values, and salads.
Flash forward to 2010– John’s dream has grown enormously popular while still providing the delicious, customizable meals its fans have loved since the company’s humble beginnings. Crowned the nation’s #1 salad franchise by Entrepreneur Magazine with nearly 100 franchised locations, Saladworks is set to expand even further with a “turbo-charged” plan for coast to coast development. With over 27 years of front-line operations experience, Paul is poised to lead Saladworks’ national expansion with unparalleled expertise. Having been a small business owner as well as a multi-unit franchisee of Burger King and Au Bon Pain, he understands the complexities of operating Saladworks at every level of development, from corner store to corner office.
Taking charge of Saladworks’ franchise profitability and branding, Paul and his team utilize in-depth results analysis to develop effective training and marketing programs. With a hands-on leadership style and a clear corporate development vision, Paul will be instrumental in the growth of the Saladworks brand and the rapid expansion of its market presence.
